More food from the garden for dinner lastnight – we harvested all of the beets (too early, but oh well – they’re still delish!), more broccoli, green beans and three green peppers. Our cucumbers are doing really well and they’re super tasty, three more will be ready in the next day or two. The cauliflower has finally made an appearance, I’ll get a pic of that for you because it’s really cool looking. White on top, PURPLE on the inside. Purple. Is that natures way of telling you when it’s ready- when it’s not purple anymore?

Anyway, back to work for me – it’s been a suckish work week and I’m not getting near as much done as I’d like to thanks to a goofy head cold thing that is making me feel all lightheaded and yuk. Today is a little more clear so I’d better get crackin’ while the thinkin’ is good.

I had to call my mom to find out how to make them, too! Cut the tops and root off, rinse in cold water. Save the tops if you haven’t used insecticides in your garden and make it like spinach. Bring water to a boil and put your sorta dirty looking beets in there and boil until you can “stick a fork in ’em”. Rinse, and the outer dirty skin slips right off with just a little pressure.

Now, I like pickled beets, and I’ll eat them with a bit of apple cider vinegar sprinkled onto them, but there great without the vinegar, too.

Also, you can apparently get two plantings out of them in a growing season. I picked mine too soon, and I may pick up more seeds and go at it again to see if I can get some bigger beets next time. 🙂

all I’ve gotten so far is radishes…they went quick and I need to get some more seeds for them. The spinach went to seed before I could even tell it was ready! now it’s sour… :p

and I have one tiny tomatoe. The corn & beans look like they’re gonna be great but my squash might be too much in the shade. 🙁

I love beets. I bet these are delicious ones too…coming from your garden. I envy you having home grown veggies, but can’t add another thing to tend to around here…at least not yet 😆

Hope you feel better. Isn’t it amazing how a little micro-organism can zap you!
