and I have one tiny tomatoe. The corn & beans look like they’re gonna be great but my squash might be too much in the shade. 🙁

Save the tops if you haven’t used insecticides in your garden and make it like spinach. Bring water to a boil and put your sorta dirty looking beets in there and boil until you can “stick a fork in ’em”. Rinse, and the outer dirty skin slips right off with just a little pressure.
Now, I like pickled beets, and I’ll eat them with a bit of apple cider vinegar sprinkled onto them, but there great without the vinegar, too.
Also, you can apparently get two plantings out of them in a growing season. I picked mine too soon, and I may pick up more seeds and go at it again to see if I can get some bigger beets next time. 🙂
