This is not a good time of year to get sick and still have to go to work. OK, never mind that. My all-time favorite Christmas cookie is one my grandmother used to make. We called them Carpet Cookies. There’s a recipe is from the old (very old) Spritz cookie press cookbooklet. They’re called something like Ginger Spice cookies (I don’t even know the actual name). You use the flat bar thing to press the dough onto the cookie sheet in long strips. When they come out of the oven and are still hot and soft you cut them into cookie-sized pieces. When they’re cool you spread thin lemon frosting on the bottom of one and add another cookie to make a sandwich. I named them Carpet Cookies when I was living with my grandparents the year I was two. She was pressing them out and I said, “Oh, look Gram, they look just like little carpets.” Anyway, if anyone who reads this has one of those little recipe books and wants to send me the recipe, I’d be eternally grateful. I really miss those cookies.
