  • Egg Nog (Eggnog) Cookies

    If you like eggnog (even if you don’t), and you’ve never had these cookies, make them. You’ll love them – trust me! They’re my personal favorites – and I promise to get a nicer photo of them this year. 🙂

    egg nog eggnog cookie cookies recipe

    1 c. butter softened to room temp.
    1 c. sugar
    1/2 tsp. nutmeg/cinnamon or 1/4 tsp each
    1 c. eggnog!
    1 tsp. baking soda
    4 c. flour

    Beat butter & sugar until it’s creamy.
    Add spices, Eggnog & baking soda to butter & sugar, blend well.
    Add flour 2 cups at a time, mix (with mixer) until combined.
    Spoon onto nonstick cookie sheet, dip a cup in sugar (holiday colored sugar, sugar/cinnamon, sugar/nutmeg, your call), smoosh the dough a little – don’t flatten them.
    Bake at 375 for right around 11 minutes, when you can see the bottom edges are golden brown.

    OK, this is strange, I just wrote about Eggnog CAKE! then I come over here and you’ve got cookies. I cut and pasted this recipe for my files, sounds like a keeper!

    Leanne, I just tried these, and they are really super-duper dry. I couldn’t finish beating them with my beater, which almost caught fire, and the cookies are all dry and crumbly when they come out of the oven. What did I do wrong??

    Oh no! Neither you or Laura are having any luck with it – I’m not sure why?! I used the exact same recipe and got the cookies pictured above. Did you soften the butter to room temp? Use a full cup of eggnog? It should be really runny and eggy before you start adding the flour, and the consistency is like chocolate chip cookie dough (without the chips) – so something definitely went amuck. I’m so sorry! :confused:

    You know, I added an egg yolk and it worked much better the second batch. Maybe there is some difference in our egg nogs? Anyway, with an egg, the cookies were a huge hit, even among people who don’t like egg nog. And don’t apologize — even without the egg, the batch I made was a huge hit with my boyfriend, so they went to a good home. 🙂
