    It has occurred to me over the last couple of weeks that (duh) I’ve pretty much forgotten how and, more importantly, what to cook for a family of four over the last 18 months.

    The girls and I are easy, you know? PB&J, Mac & Cheese, Grilled cheese, soup, pasta with chicken, just small light things. I can do that. (read: McD’s, Wendy’s, BK… oopsie)

    Now I’m sitting here thinking “I’ve got to make a grocery list”. Huh? What do I put on it again? Milk and cereal? Chicken? What do I do with the chicken once it’s home in the freezer? Yea. It’s that bad.

    There are a couple of things that are our favorites. Those – no problem. But the poor boy has been eating out of boxes and MRE bags for 18 months. I need some HUNGRY-MAN type meals. Boy’s got an appetite you know?

    So if you know of a nummy, hefty meal that any hungry meat & potatoes kinda guy would just dig into without a second thought, drop those recipies here in comments for me (and any other interested party), wouldya?

    Well hello again. Sorry I’ve been gone. I feel like I haven’t been a very good friend. This last week was crazy. Now I’m sick so it serves me right for trying to do too much in too little time. I didn’t even get to ski like I wanted. Bummer! I love Barkley. What a cool little dog to be so comfy in all his glory. We could learn something from him, I think. Beautiful job on Sheeba too. She should be in commercials! Recipes…Todd’s favorite is taco pie. Easy too. Take refergirated pie crust, roll it out in a pie pan and bake it to directions. Brown ground beef with taco seasoning. Add refried beans and picante sauce. Put that mixture in the pie pan. Top with cheese and bake until the cheese melts. Top with lettuce, tomatoe, onions, sour cream whatever. I cut up tortillas into triangles, bake them for chips and serve with it. I get a lot of recipes from kraft.com but I will keep thinking and send you some more. Hugs to you and the girls, clara

    Funny you mention that, he used to not like his food to touch, but I think he’s over that now! 😆

    One chicken dish that Scott actually likes is my Chicken Picante:
    2 or whatever # boneless, skinless chicken breasts
    Jar of chunky picante (we like medium strength)
    salt
    pepper
    foil

    Preheat oven 350 degrees
    Salt and pepper both sides of chicken
    Dump the picante on top
    Wrap and seal in foil
    Throw the package in the oven for an hour and be careful unwrapping because it will be steamy hot

    Serve with steamed rice (or buy a box flavored rice) and side of your favorite veggies 😀

    Chicken will come out tastefully moist 😉

    I love cooking the whole chicken in the manner but I add bell peppers and put cubes of butter all over the chicken and season inside and outside the chicken, this might be fun for the 4 of you to eat!

    I just had this a few weekends ago and Jason really liked it. Take already made pizza crust and top with enchilada sauce, refried beans, ground beef, black olives, onions, jalapenos (optional), diced tomatoes (can used canned) and top with cheddar cheese. Bake according to directions on pizza crust package. You could also use Clara’s idea of the refrigerated pie crust for the pizza shell.

    You could also use a cream of chicken soup base and top with mozzarella cheese, chicken, broccoli, bread crumbs, and smother with cheddar cheese. Or you could use barbeque sauce with chicken, bacon, onion, cheddar and mozarella cheese. Mmmm mmmm goood!
